With it’s delightful coconut flavor and an adorable marshmallow tail, this Cottontail Martini is the perfect Easter co*cktail idea.

You are in for a treat today. I have the perfect Easter co*cktail recipe for you. I created this Cottontail Martini back in 2017 and since then it has become somewhat of an official Easter co*cktail. Love that!

The base flavor of this martini is coconut. And since coconut is one of my favorite Easter flavors, so this Cottontail Martini is my new favorite. That, plus the marshmallow “tail,” will make this the perfect martini for all of your spring celebrations.

Pair this with my coconut macaroon nests, egg hunt sugar cookies, and carrot cake truffles and you’ll have an Easter spread the Easter gummy himself will be talking about!

If you haven’t already guessed, this martini was inspired by Peter Cottontail, the rabbit that went hoppin’ down the bunny trail. (The word “co*cktail” made me think of the song.) This co*cktail has a delightful coconut flavor and an adorable marshmallow tail.

Why You Love This Recipe

  • It’s delicious – As I mentioned above, the coconut flavor really reminds me of Easter, plus there’s a hint of a fresh tropical twist. So good!
  • Really simple to make – Shaking up a delicious martini doesn’t need to be difficult. You’ll be able to put this together in no time allowing you to spend more time hunting Easter eggs.
  • Cute as a button – I bet you never had a martini with a marshmallow “cotton tail.”

Ingredients

The co*cktail base is two liquors: whipped vodka and coconut rum. Yes, whipped vodka is a flavored vodka, and it’s actually pretty tasty. (I use the Pinnacle brand.)

Along with the liquors, you’ll need half and half, cream of coconut and pineapple juice. I know you might be tempted to skip the pineapple juice, but don’t. The tropical fruitiness that it brings to this martini is a must.

  • whipped vodka or vanilla vodka – I really like the whipped vodka here, but vanilla is great too!
  • coconut rum – My go-to is Malibu coconut rum.
  • half and half – This adds such great creaminess to this martini recipe.
  • cream of coconut – My favorite for co*cktails is the Rèal brand cream of coconut.
  • pineapple juice – This adds a kiss of fruit sweetness which works great with coconut.
  • Honey, chopped sweetened coconut, and marshmallow to garnish

How to Make

This martini recipe is pretty straightforward, but I’ll walk you through it regardless. For your convenience, I’ve also provideda full ingredient list and detailed instructions in the printable recipe card below.

  1. For garnish of this Easter co*cktail, start by rimming a martini glass with coconut. To help the coconut stick, give it a quick chop before using it. I also prefer to use honey as the “glue.” That seems to work best. Set this aside.

  1. Fill the co*cktail shaker with ice. Top with the whipped vodka, coconut rum, half and half, cream of coconut, and pineapple juice.
  2. Shake vigorously.
  1. Strain into your prepared martini glass.
  2. For the pièce de résistance, cut a small slit in a marshmallow and hang it on the edge of the glass.

Make it a Mocktail

I’m certain that everyone, including children, will want to partake in a cottontail martini. If you want to create this recipe for kids (or adults that don’t imbibe), just substitute the rum and vodka with milk. (You may want to use a plastic martini glass too.)

Ingredients

  • 1.5 ounces whipped vodka or vanilla vodka
  • 1.5 ounces coconut rum
  • 2 ounces half and half
  • 1/2 ounce cream of coconut
  • Splash of pineapple juice
  • Honey, chopped sweetened coconut, and marshmallow to garnish

Instructions

  • Begin with two shallow dishes. To one, add a teaspoon of honey. To the other, add the sweetened coconut. (I recommend giving the coconut a rough chop before using.) Rim the edge of the martini glass first in the honey and then in the coconut. Set aside.

  • In a co*cktail shaker filled with ice, combine the whipped vodka, coconut rum, half and half, cream of coconut, and pineapple juice.

  • Shake vigorously; then strain into your prepared martini glass.

  • As a final garnish, cut a small slit in a marshmallow and hang it on the edge of the glass.
