WHY ARE CASSEROLES SO GREAT?

Casseroles are fantastic for dinner because everything you need is in just one pan. The entire meal is baked at once! Most casseroles are made with some type of protein, vegetables and something to help bind everything together (usually sauce and/or cheese). Casseroles are very easy to modify to fit personal preferences – just leave out the ingredients you don’t like and add the ones you do!

How to reheat casseroles?

Unless you have a big family, you may end up having leftovers since most casseroles are baked in a 9X13 pan. Most casseroles reheat quite nicely and the leftovers make great lunches for the rest of the week! You can reheat one serving at a time in the microwave or in an air fryer. If you have a lot of casserole left in the dish and you want to serve it again for a second time, you can add a little water and milk to the pan and then cover with foil. Reheat in an oven for about 15-20 minutes at 350° or until warmed all the way through.

Ingredients

1 tablespoon olive oil
1 pound chicken breast sliced
1 green bell pepper sliced
1 red bell pepper sliced
1 yellow onion sliced
2 tablespoons fajita seasoning
8 ounces cream cheese at room temperature
2 cups shredded cheddar cheese divided
15 oz. can black beans drained and rinsed
Cilantro roughly chopped, for garnishing (optional)

Instructions

Preheat the oven to 350°F.
Heat the olive oil in a large skillet over a medium-high heat. Add the sliced chicken and cook, stirring, until cooked through. You can make sure the chicken is fully cooked by using a meat thermometer and making sure the internal recipe is 165°. Remove the chicken from the skillet and set aside.
Drizzle a little extra olive oil in the skillet if necessary, then add the sliced peppers and onion. Cook, stirring, until just softened. Add the fajita seasoning and cook, stirring, for 1 minute or until fragrant. Remove from heat.
Add the softened cream cheese and 1 cup of the shredded cheddar cheese to a large mixing bowl. Mix until well combined. Add the cooked chicken, cooked pepper mixture and black beans, and mix until well combined.
Transfer the mixture to a 9 x 13 inch baking dish. Sprinkle the remaining cup of shredded cheese over the top.
Bake for 30 minutes. Sprinkle the chopped cilantro on top (if desired) just before serving.

CAN YOU FREEZE CASSEROLES?

Most casseroles freeze beautifully. The exceptions are casseroles that are made with eggs or a significant amount of dairy (milk, sour cream, cream cheese, etc).

As long as a casserole does not have any raw protein in it, you can freeze the casserole before baking. Once the casserole is assembled, double layer with foil and then freeze for up to 3-4 months. When you are ready to bake, let the casserole thaw in the refrigerator for about 24-36 hours and then bake according to the original instructions.
